Glaze Icing vs Royal Icing
This recipe is for glaze icing. You may be asking yourself, ‘isn’t icing just icing?’. Not quite.
So then, what’s the difference?
As far as ingredients go, there’s not much difference. Both icings are typically made from confectioners sugar and either milk or water. However, royal icing has egg whites added to the recipe.
In regard to how the icings behave, they’re actually quite different. Glaze icing is the go-to recipe for casual bakers since it’s much easier to make. However, since royal icing is generally much tougher and less prone to cracking. Royal icing also dries quicker. Glaze icing usually works fine for most occasions, but if you’re worried about presentation or cracking, royal icing may be the better option.

Baking Tips and FAQs
- Don’t skip the corn syrup. The corn syrup in this recipe gives the icing a glossy finish and helps prevent cracking.
- If you need a thicker icing, add more confectioners sugar. Likewise, if you need a thinner icing, add more corn syrup.
- If possible, use clear flavor extracts to keep white icing as white as possible.
Sugar Cookie Icing Recipe
Ingredients
- 1 cup Confectioners sugar (powdered sugar)
- 1 tbsp Milk
- 2 tsp Corn syrup
- 1/4 tsp Almond extract (or other extract flavor)
- Desired food coloring
Instructions
- Add the confectioners sugar, milk, corn syrup, and extract flavoring into a medium sized bowl. Use a stand mixer or beaters to mix at high speed until fully combined (about 2 minutes).
- I you want different colors, evenly divide the icing mixture among different small bowls. Add the desired food coloring to each bowl of icing mixture. Mix until the color has been evenly distributed.
- You're done! If you want to paint the icing on with a food-safe brush, the bowls should work great. If you want to apply the frosting using a piping bag, you place a sandwich bag or piping bag inside of a tall cup as shows below. This makes it easy to pour the icing into the bag.
