Welcome to the brand new baking blog, Live Laugh Bake. To kick things off, we’ve created the softest and creamiest cinnamon cookies in existence. We’re not kidding, these cookies are so soft and gooey that they nearly melt by just looking at them. That’s why we’re calling this the BEST soft cinnamon cookie recipe. Let’s get to it!

What Makes These Cinnamon Cookies Special?

You may be asking yourself, aren’t cinnamon cookies kind of old-fashioned? And, the answer to that question is probably yes, but that doesn’t make cinnamon cookies any less amazing.

When I think of cinnamon, my mind always pictures something rich and buttery with a bold cinnamon flavor, like cinnamon rolls. Here at Live Laugh Bake, we felt it is a shame that there isn’t really a good cookie recipe that captures this flavor profile. So… we did.

First, we wanted a soft and creamy cookie, and to do that we decided to do two things: use equal parts brown sugar and white sugar; and, melt the butter. Generally, cookie recipes call for more white sugar than brown sugar. In our recipe, we’ve upped the amount of brown sugar in the standard brown-to-white sugar ratio. The extra molasses in the brown sugar helps create a soft and moist cookie. Likewise, melting the butter before adding it to the recipe will add to the softness of the cookies.

Next, we knew it was important to capture the hallmark cinnamon and nutty flavors that are often paired with cinnamon desserts. This was easy, we added lots of cinnamon and walnuts.

Baking Tips and FAQ’s

Can I freeze cinnamon cookies and cookie dough?

Yes, you can freeze both. Just keep in mind that the cookie dough will be rock solid when it’s frozen, so before you freeze them roll them into dough balls (2 tbsp) and place them into a container or a freezer bag. Bake the frozen cookie dough within 6 months for maximum quality. When baking frozen cinnamon cookie dough add an additional 1-2 minutes to the bake time.

How long will the cookies last once baked?

Once baked, these cookies will last about 10 days if stored at room temperature; and up to 1 month if stored in the refrigerator. If you’re unable to finish the cookies within those time-frames, you can always put them in the freezer where they’ll be fresh for up to 6 months.

The Best Soft Cinnamon Cookies

Ingredients
  

  • 2 sticks unsalted melted butter (warm but not hot)
  • 3/4 cup white sugar
  • 3/4 cup packed brown sugar
  • 1 egg
  • 1 egg yolk
  • 1 1/2 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup chopped walnuts

Instructions
 

  • Preheat the oven to 350 degrees. Melt melt the 2 sticks of butter in the microwave for about 45 seconds. The butter should be mostly melted but NOT hot.
  • Using a mixer or beaters, mix the butter and sugars until they are creamy.
  • Add the vanilla and the egg, plus 1 additional egg yolk. Mix for a few seconds at low speed, but be careful not to over-mix or the cookies will be stiff.
  • In a separate bowl mix the flour, baking soda, and salt. Then, add the flour mixture to your cookie dough. Mix until all ingredients have been evenly incorporated. Next, mix in the chopped walnuts.
  • For best results, refrigerate for at least 1 hour before baking (This helps the cookies stay as thick as possible).
  • Roll the dough into 2 tbsp sized balls (about 2 inches in diameter) and place them on a cookie sheet. Bake for 9 – 11 minutes until the cookies just start to take on a golden color (it's always a good idea to keep a close eye on the first batch to be sure you don't over-bake them).
  • Allow the cookies to cool on the pan for at least 15 minutes before transferring them to a cookie rack to finish cooling. The cookies will sink down slightly while cooling. Once they've cooled, you will be the proud creator of the softest and creamiest cinnamon cookies in all existence. Enjoy!
